Red Hot & Blue

Some people love their all meat samplers, others love the pop that comes in a pitcher with a straw, others love the atmosphere. I love the potato salad. I swear to you, it's the best I've ever had. Ever.Red Hot and Blue's Potato Salad

Ingredients
  • 2-2 1/2 lbs red-skinned potatoes, skin on
  • 6 eggs
  • 1 bunch green onions, just the green parts, diced finely
  • generous 1/2 cup real mayonnaise
  • 3/4 tsp celery salt

Method

  1. Place potatoes and eggs in a large pot of cold water and bring to a boil. Cook for 10-15 minutes, until the potatoes are tender but not mushy. You can pre-cut the potatoes if you wish, though this will probably make for mushier results unless you're super diligent about checking them. The eggs can be boiled separately if you wish; they just need to be hard boiled.
  2. When potatoes are done, drain them into a colander. Run cold water over the eggs to make them easier to handle. If you boiled the potatoes whole, chop them into bite-sized pieces when cool enough to do so. Shell the eggs and dice them.
  3. In a large bowl, gently mix all the ingredients together (you don't want to end up with mashed potatoes if you're too rough with this step!). Serve at room temperature for best flavor... No really!

I don't think I would mind the fact that I am no longer in the running to get that particular piece of machinery if it hadn't been dangled infront of me as an (apparently not so real) option.
As is, I feel rather messed around with
and not so thrilled.
And maybe a little hurt.

This feeling is only compounded by the fact that I now have
NO IDEA
what I will be driving to Canada in 29 DAYS.
My poor, battered, very used, over worked truck WILL NOT make the trip. Since buying it 4 years ago, I have put 90,000 miles on top of the 80,000 miles it had already seen. Almost the entire engine has been replaced at one point or another. The exhaust manifold has been patched more times than is possibly legal. It's time to be retired. It's been time for a while now, really.

I've looked into the option of renting a vehicle for my trip. A great choice. If you don't mind paying $3,500 for something you're going to return at the end of the time.

My in laws have four vehicles, one of which I have requested the use of ... however, the answer to that one hinges on so many other factors it nearly boogles the mind.

I'm a planner. An organizer. A definer of all that is good and logical.

Not knowing details and facts just about drives me crazy.

Because I Want To Win, Darnit!

So my best friends wife, who I think I can also call my friend ... you know, we've ate together, laughed together, saw the other in our swim suits, cooked wienies together - so I think that constitutes a friendship, is having a give away on her blog. Since I desperately want to win one of the prizes she's giving away as a baby gift for my sister in law (I'm not cheap, I'm resourceful!) I am blogging about it. I think that means I have earned like 8 entries so far.
I think if other people go there from my blog and enter saying you learned about it from my blog I get an extra two entries per person ... though maybe I shouldn't have told you that, as it decreases your chances of winning as mine improves.
Hmmmm, things to think about: how much information should you REALLY disclose to others on your blog?

Good Golly, Miss Molly!

It's been FOREVER since I updated.
I have tons of reasons.
Well.
More like two reasons.
But they are both VERY good reasons.
1) We went out to Quitman for Easter and I didn't bring my laptop with me. Therefore, no posting.
2) Same day I returned home from Quitman, I picked up my sister and her kids from the airport. They stayed with us till Monday.
For some reason all I felt like doing yesterday was sleeping. It was odd. I literally had a 4 hour "nap", then was asleep by midnight. That NEVER happens in my world.

So today, I shall catch you up on all the wonder and glory that we enjoyed in that time frame.

First, we went out to Quitman to enjoy Easter with Jerry's parents. They live in a minuscule town filled with distant relations and holidays such as Easter are a great time to throw all the cousins - no matter how distantly related- together.
On the Saturday we held a massive Easter egg hunt at Wayne's uncle Lons' house. The kids had a blast.
Sunday we enjoyed a quiet church service and dinner with family and friends.
We also picked up Dawn and her two oldest Sunday evening ... which started off the week of packing as much fun as we could into the time they were here.
They did a few things without us, as my kids had school this week ... if you want to read about that, head over to her blog ... unless she hasn't blogged about it yet. Then ... never mind.
We spent time at the Fort Worth Zoo Road on the T.R.E. Went to the Fort Worth Arts Festival and Sharkarosa Climbed the rock wall at the Dallas R.E.I. Cheered for our losing knight at Medieval Times and rode go carts, played miniature golfed, jumped in bounce houses and rode carnival rides at Mountaisa ... to top it off we took them to a movie at the Bedford Movie Tavern.

Easter at School

Even though there is a HUGE emphasis on schools being "politically correct" in all they say and do, I have yet to see them not celebrate ALL and every holiday. I've come to realize it's just the state trying to control things, not that anyone pays any attention.
Both Ms. R's and B-man's classes had Easter parties today. I missed out on Ms. R's Easter egg hunt since I was running stupid errands for the 1st grade teachers (grumble grumble) so I was unable to get pictures of that. However, while they were outside, Ms. R got caught up in the excitement of it all and well ... failed to get to a toilet in time. I had planned on leaving her class party to head over and catch B-man's hunt too, so I just signed Ms. R out early, rushed her home, got her changed and we both went over to B-man's school for his party.
B-man's teacher was REALLY smart about the egg hunt. She wrote all the boys names on 12 eggs each and scattered them all over the side yard. They were only allowed to pick up the ones that had THEIR name on it. This not only allowed the slower boys to get their fair share, but it slowed down the hunt a little bit while the boys inspected each egg they came to. Oh yeah, she's a genius.

We're headed out to Quitman for the weekend, to do the MASSIVE Easter egg hunt/pinata smash/Saturday afternoon "lupper" at Wayne's uncles house and Easter dinner Sunday afternoon. I love having the separation of the two. Sure, do fun stuff, have hunts, give gifts ... but do it SEPARATE from the day you observe something as reverent as the Lord's resurrection. At least that's MY opinion. Not that I huff and puff at anyone who doesn't. But I love this way.
Back home Sunday evening in time to pick up Dawn and her two oldest from the airport, woohoo!

I just finished watching
"Transporter 3".
